The history of blueberries is short. They were consumed by indigenous populations but their entry into gastronomy is recent. Native Americans ate fresh blueberries. They also dried them in the sun to be used later in pancakes and cakes.They also crushed these dried fruits and used them as a seasoning on meat and in soups. The commercial cultivation of this small fruit began at the beginning of the century, in North America. The blueberry is a fruit that requires little land. It grows in difficult conditions.
